Here’s a delicious, crisp salad that makes a great side to fish, chicken or burgers. This slaw is incredibly flexible and depending upon what you have on hand could also include diced apples, golden raisins, walnuts, celery or anything else that suits you. Likewise, the dressing can be seasoned according to your taste by adding fresh herbs.
INGREDIENTS
Cabbage Slaw
5 or 6 cups green cabbage, shredded (or bag of prepackaged shredded cabbage)
2 carrots, grated
1 cup, red cabbage
2 mandarin oranges, peeled and sectioned
1/3 cup Craisins
1/4 cup slivered almonds
1 or 2 tsp sugar (optional)
salt, pepper to taste
Low Fat Dressing
1/2 cup nonfat Greek yogurt
2 Tablespoons red wine vinegar
other seasonings as desired: dill, thyme, chives
DIRECTIONS
Place all ingredients in large bowl, except sugar, salt and pepper.
Combine yogurt and vinegar. Pour dressing over vegetables.
Stir thoroughly.
Season with sugar, salt and pepper.
Chill.
Servings: 6 (1 cup each serving, 100 calories)
