This simple, straightforward tzatzik (aka “cucumber sauce” per daughter Madeleine) makes a light flavorful condiment or dip.
Here's a delicious version.
Tzatziki
Ingredients
1 large cucumber, peeled, finely shredded
3/4C Greek Yogurt, organic, 0% fat (drain liquid if needed)
1 tsp minced garlic
1 1/2 tsp dill, fine
the juice of half a small lemon
kosher salt
Directions
1. Cut off ends of cucumber, peel and shred. Place shredded cucumber into cheesecloth, sprinkle with a little bit of kosher salt. Allow moisture to drain from shredded cucumber, about 15 minutes. Squeeze out any remaining moisture.
2. In a medium bowl combine yogurt, garlic, dill and lemon juice. Stir to combine.
3. Fold cucumber into yogurt mixture.
4. Chill, 1 hour.
NOTE: I use a small cheese grater to shred the cucumber.
