As evening came upon us we felt the first pangs of hunger, but really weren’t in the mood for the encore performances of what was in the fridge. Our one protein – three meals experiences were already finished and there was barely enough fish left over from our meal midday to feed one person let alone 4. What to have?
Omelettes.
Mine was delectable. Two eggs filled with diced green onion, tomato, and kalamata olive, plus 10grams of finely grated, very sharp English Cheddar cheese. After plating the omelette I added thinly sliced roma tomato and 1/3 of a small avocado (25g).
Truthfully, this is the first time we’ve ever had omlettes outside of breakfast or brunch; we’ll be doing this again sometime.
