Kale chips … Really?
Yes, really! And they are DELICIOUS. Good enough to “write home to mother about.” Though, actually I called on the telephone (instead of writing) and talked to both my mom and dad about it.
Lately we’ve really been emphasizing good nutrition and trying new foods with our kids (14yrs and 8yrs.), plus very intentionally including them in the exploration of both. Today at the grocery we were picking up celery and radishes for the vegetable tray that has become a permanent fixture on our meal table. As we were perusing the vegetables, Madeleine evaluated the leafy greens. This is the second time in 3 days that she’s done this and has expressed curiosity about them. Today, I capitalized on the moment. “Shall we try some leafy greens tonight?” I asked casually. She responded in the affirmative. “You choose,” I encouraged. She looked at the chard, but wasn’t too excited about the red veins; she didn’t want something that wasn’t ‘all’ green. She picked up spinach … no, she likes spinach and we eat a lot of spinach already; she wanted something new. What’s this dark leafy green with the curly edges? Kale. Okay, kale it is! At this point I’m thinking to myself, the only time I use kale is in soup… how do I serve it as a side dish veg?
Once home I did a little surfing for kale recipes and there before my eyes were recipes for Kale Chips. Kale chips? Really?
Yes. Really. Quick, easy, delicious and full of nutrition! And… all four around the table ate it. Photographic evidence below:
Here, based on a variety of sites that I read and then creating essentially my own version, is a recipe for Kale Chips.
INGREDIENTS
1 bunch of kale (organic preferred)
salt, kosher or sea salt
1 – 2 tsp olive oil
1 T parmesean cheese (spaghetti cheese)
DIRECTIONS
1. Rinse kale
2. Remove stem and vein.
3. Cut into small pieces, about 2 inches
4. Scatter around a cookie sheet in one layer.
5. Drizzle 1 tsp of olive oil over kale (I ended up with 2 cookie sheets worth of kale and sprinkled a tsp of oil over each one)
6. Sprinkle with a generous portion of salt
7. Sprinkle parmesean cheese
8. Place in a preheated, 375 degree oven for 10 minutes.
9. Serve as a snack or a side
Quick, easy, healthy!
I would never have guessed how good this would be.
