Crab cakes have such versitility as a meal or appetizer. Likewise, the seasoning and 'sauces' can be tweaked to taste.
Crab Cakes
Ingredients
8 ounces fresh crab meat
1 egg
2 T + 1 T butter, melted,
1 T mayo or horseradish sauce (pre-pkg)
1/4 tsp Old Bay Seasoning
salt and pepper to taste
panko
Directions
Mix first 6 ingredients in a bowl. Mix gently to combine.
Form a very small amount of the mixture into a cake – about the size of a quarter. Coat/dredge with panko.
In a medium skillet, melt an additional 1 T butter over low heat. Place cakes, one or two at a time in the pan and cook until golden brown. Turn over cake and continue cooking until this side too is golden and crab is heated all the way through.
