Moist chicken with delicious stuffing offers both creaminess and nutiness.
This recipe can be made ahead and baked within 24 hours or frozen.
4 chicken breast, boneless, skinless
2 oz pine nuts
1 C baby spinach
1 pkg chevre goat cheese with basil and garlic
1/3 C chicken stock, approximate
salt and pepper to taste.
Directions
Preheat oven to 350 degrees.
Toast pine nuts.
Hand tear baby spinach into smaller pieces.
Place pine nuts, spinach, and goat cheese into a bowl and stir to combine completely.
Pound chicken to 1/4 inch thickness.
Place 1/4 of the cheese-spinach mixture onto each of the 4 chicken breasts.
Roll each chicken breast tightly to contain all cheese mixture. Place seam side down in a medium size roasting pan. Pour chicken stock around rolls to moisten pan (the full 1/3 cup may not be needed depending upon the size of the base of your pan, likewise it may require a little more).
Bake in preheated oven for 40 minutes.
