This burger delights the blue cheese lover with tender beef, the sweetness of pickled red peppers and the full bodied flavor of the blue cheese. The preparation technique allows for a larger portion of blue cheese.
1 lb ground round
8 oz blue cheese
salt and pepper
Cut 1 lb ground round into 8 pieces.
One piece at a time, press the meat into 8 thin disks/burger.
Place 2 oz of blue cheese on one burger.
Place a second thin disk of meat over the first disk of meat and blue cheese.
Firmly press around the edges of the two thin burgers to seal the edges and keep the blue cheese inside the burger.
Prepared burger will look like this. Salt and pepper to taste.
Grill 3 minutes on each side.
A note about cooking time: Keep in mind that these burgers are actually thinner than they look visually and will cook quickly. The cheese inside the 2 burgers will be warm and slightly melted, but not oozing.
Serve on a toasted/grilled bun, topped with red roasted or pickled peppers or other favorite burger toppings. Or better yet, for the fullest flavor of the blue cheese enjoy it 'plain and dry' (i.e. no condiments).
Quite honestly, these do not make the most visually beautiful burgers, especially if you use a well aged blue cheese, but the taste is dynamic.
