As I was walking through the produce department while picking up a few items for dinner, a couple boxes of beautiful figs caught my eye. They were perfectly ripe.
Dessert!
Now you have to understand that dessert is not a regular occurrence at our table, not because we don't like it ... trust me, my kids would have dessert after every meal, including breakfast if I'd let them ... but because most of the desserts that we yearn for are rich, creamy, high calorie, high fat, decadent plates that delight all the senses.
All the more then, when I can find a tiny treat that has a luxurious taste and feel, and is light... I'm all about it!
Fruit and cheese...and here, figs and cheese... fit the bill.
If you find figs in your local grocery stop and give them a little touch. If they have a little give, but aren't at all mushy... take a deep breath, write goat cheese on your shopping list quickly as not to forget it, and repeat after me: Dessert!
Figs, with Goat Cheese and Honey
Serves 2
2 figs
1-2 T honey
goat cheese crumbles
1/4 C balsamic vinegar
Pour balsamic vinegar into a very small sauce pan on medium-low. Reduce balsamic to a this syrup.
Trim 2 figs and slice in half. Place them in a small oven safe dish.
Drizzle each fig with honey.
Place under the broiler (on high) until honey begins to bubble slightly and figs warm.
Remove from broiler.
Place several pieces of goat cheese (crumbles size) on top of figs/honey.
Return to the broiler until cheese softens, but does not brown.
Remove from broiler.
Plate to a small dish.
Drizzle a tsp of the reduced balsamic over each fig. Serve.
