While Ken and I enjoy Mexican food, our kids aren't wild about it. For example, when we go to our local favorite Mexican restaurant (on this side of the border) we order carne guisade, chicken with mole' sauce, and eat the freshest salsa verde. The kids order pancakes. Sigh.
At home, when we cook Mexican the kids want ... yes, pancakes. Again, sigh.
We have great kids who do try their best to explore new foods and slowly they've tried a bite of different Mexican foods here and there; Madeleine will now eat queso fresco, but for the most part they're not sold on it. UNTIL... I began to make "cheesy roll ups." (I really must come up with a better name!)
They are super easy, fast, and basically use ingredients I'm already using or that I generally have on hand.
Cheesy Roll Ups
Corn or Flour Tortillas
Shredded cheddar or co-jack cheese
Queso Fresco cheese
Pam cooking spray
Soften tortillas.
Place a small amount of cheese (one or both kinds) into the warm/soft tortilla and roll.
Place them in a metal pan. When all tortillas and cheese are rolled, spray the entire pan of tortillas with a generous layer of Pam cooking spray.
Place in a 400 degree oven and cook until golden brown and crunchy. I wish I could say their beautiful and a feast for the eyes, but really they just look like deflated, naked enchiladas. But... my kids eat them!
Serve hot with sour cream.
