My son's palate is very particular, aka he's a "picky eater".
Not long ago while we were at a hibachi restaurant he tried and liked fried rice. I had not ever made fried rice, but now that we're on our Japanese foods experimentation route and have leftover short grain rice, plus trying to find dishes that appeal to his particular taste buds, I decided to give it a try.
I don't know why I waited so long to make this easy to prepare tasty rice!
Simple Fried Rice for a Picky Eater
day old, leftover rice (I had just shy of 2 C)
1 larger egg
1.5 T veg oil
2 T chopped green onion
1 tsp fresh chopped ginger
1 - 2 tsp soy sauce or tempura sauce
sesame oil
salt and pepper
Heat pan (I used a small stir fry pan, but a simple fry pan would work just as easily) until it is hot enough to make 2 drops of water sizzle on it.
Add veg oil.
Add egg, salt and pepper lightly, and scramble until curds are soft. Remove scrambled eggs and set aside.
Add rice, green onion and ginger all at once. Begin to stir.
Pour soy sauce and/or tempura sauce over rice (add more to intensify flavor).
Continue to stir gently until sauce mixes and rice begins to heat (approx 2 minutes).
Lower heat. Add a drizzle of sesame oil over rice (this is primarily for flavor). Return egg to rice and continue to stir until rice is heated through.
Plate and enjoy!
