Look at these beautiful tortilla chips. These are corn tortillas that Mom brought back from Mexico last week. Ken baked them in the oven and seasoned them slightly with sea salt. What a perfect complement to the soup.
Following is Ken's own recipe for Tortilla Soup and Homemade Baked Tortilla Chips
Tortilla soup
6 cups chicken stock
2 10.5 once cans tomato puree
comino - to taste
chili powder - to taste
one onion - fine chopped
two jalapenos - chopped (you can choose to either ditch the seeds or not)
chopped meat of one whole chicken
one can of corn
salt and pepper
cook until the soup reduces by about a fifth
Homemade Baked Tortilla Chips
homemade baked tortilla chips - cut corn tortilla chips in quarters, place on baking sheet, spray a bit of PAM on them, sprinkle with sea-salt, cook in oven (400) until you achieve the level of crispiness you want
