The very first Iron Chef (the Japanese version) episode that my mom and I watched was Battle Broccoli. It was the night that solidified what she and I always knew... there's no better vegetable in the world than broccoli and it belongs as stir fry! Note that I'm not suggesting in stir fry, but as stir fry -- center stage, the main event, the center piece. Following is one of many ways to prepare it. Here's to you, Mom!
4 C broccoli, tops only please
1 C mushrooms
1/2 C green onions
1 T finely minced fresh ginger
soy sauce
unagi sauce
sesame seeds
1 T sesame oil
1 T vegetable oil
Heat wok or 10 inch frying pan.
Add broccoli and stir for about 2 minutes or until the broccoli begins to turn bright green.
Add fresh ginger, trying to get it to the surface of the pan when you add it
Add mushrooms and green onions. Continue to stir for another 2 to 3 minutes or until the broccoli begins to soften, but is still very green and al dente.
Add soy sauce and unagi sauce (a few tsp of each, to taste).
Just before removing the broccoli from the heat, sprinkle generously with sesame seeds.
